Biggest operational problem is if the file system is not stable
on bootup you might as well order a 7 course meal waiting for
the fsck to complete, which is why I recommended looking at UFS logging.

Yes.
Depending on what you are trying to accomplish you can either
stripe drives together or concatenate them, and you can also
concatenate metadevices together to create a larger metadevice.
